Green Chili Rice Casserole

Ingredients

  • 1 cup Onion , Chopped
  • ¼ cup Butter
  • 3 cups Rice, Cooked
  • 2 cups Sour Cream
  • 1 cup Cottage Cheese
  • 1 each Bay Leaf
  • ½ teaspoon Salt
  • teaspoon Pepper
  • 1 - 2 Cans Green Chili's, Chopped
  • 1 cup Chedder Cheese, Shredded
  • 1 each Parsley, chopped

Method

Saute Onion in butter till tender but not brown. In a large bowl combine onion, rice, sour cream, cottage cheese, bay leaf, salt, pepper and green chili's. Turn into 9" baking dish Sprinkle with cheddar cheese. Bake uncovered in a 350 degree over for 30 minutes. Sprinkle with parsley.
